Gragnano Pasta is typically made from durum wheat semolina and water from the spring in Gragnano. It has a uniform texture with no black or white marks, air bubbles, cuts, cracks or breaks. It is straw-yellow in colour with a grooved appearance due to it being bronze die cut. It is firm and elastic in texture, maintaining its uniformity and remaining al dente without becoming gummy. The production zone is the municipality of Gragnano, in the Province of Naples. The labels on the packaging must bear the following information: ‘Pasta di Gragnano’ and ‘Protected Geographical Indication’ or the ‘PGI’ acronym; the name, company name and address of the packaging company or producer; the logo of the ‘Pasta di Gragnano’ name.
